With Combi-Steamer

  • Steam at 100 °C about 60 min.
  • Roast at 130 °C about 160 min.
    Combi-steam 50/50
  • Core temperature of 70 °C
  • Remove net
  • Hot air at 180 °C about 12 min.
  • Core temperature 74 °C
Without Combi-Steamer

  • Roast gently about 220 min.
    (Beginning 110 °C - End 150 °C)
  • Core temperature 70 °C
  • Remove net
  • Roast 180 °C about 20 min.
  • Core temperature 74 °C


Master Tip

Before roasting coat the net with seasoned oil and loosen it! The recommended core temperature should not be exceeded otherwise the fine meat stuffing dries out too much and the portion does not bind very well. NEVER roast the net sharply and always remove it before coloring! Before slicing the meat let it "rest" for about 10 minutes.
